L’Shana Tova: Kosher Carrot-Apple-Honey Cake (Rosh Hashanah)

IMG_5306L’Shana Tova! This week my Jewish friends and family celebrated Rosh Hashanah, the Jewish new year. Celebrating year 5774, this holiday has some well-established traditions (especially when they come to food). During Rosh Hashanah, it is tradition to eat foods that symbolize good things they hope for in the coming year – such as apples and honey to hint at a sweet year to come. Since we’re rather partial to sweet things here at Foodie Fox, I decided to make a Kosher Carrot-Apple-Honey Cake for my office this week. This recipe from The Kosher Scoop, a website dedicated to all things Kosher cooking, is not only delicious and filling, but also incredibly healthy. Much like we do on the internationally recognized New Year, an emphasis is placed on making better choices in our lives and this healthy cake is a great place to start. I would suggest fudging this very flexible recipe,  here and there, to include more and less of the things you like. Since we didn’t have any maple syrup, I relied only on the honey and applesauce for the sweet taste. If you are interested in having it be a bit sweeter, be sure to include the maple syrup or some other form. If you are looking for a dessert to celebrate this Jewish holiday or just trying to find a good alternative to some of the less healthy carrot cakes, slice, dice and roll! Servings: 8-12


Ingredients: (adapted to our taste)

  • 1/2 cup extra virgin olive oil
  • 1/3 cup honey (note: plus more for drizzling)
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1 1/2 cups spelt flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 tsp cinnamon
  • 10 oz carrots, tops cut off and sliced
  • 1 Granny Smith apple, cored and finely diced (skin on)

The Four-Step Process: whisk wet ingredients (top), mix wet and dry ingredients (middle-top), fold in carrots and apple (middle-bottom), bake in pan for 30 minutes (bottom)

Instructions: (adapted to our taste)

  1. Preheat oven to 325 F
  2. Line bottom of a 9-inch round cake pan with parchment paper and oil the sides
  3. In a large bowl, whisk the oil, honey, eggs and apple sauce
  4. In another medium bowl, whisk (with a clean tool) spelt flour, baking powder, baking soda, salt and cinnamon until well mixed
  5. Pour liquid mixture onto dry mixture and whisk until a batter is formed
  6. Add in shredded carrot and diced apple, mixing in with a spatula (note: do not overmix, but make sure carrots and apple are evenly distributed)
  7. Place batter in the prepared pan and bake for 30 minutes
  8. Drizzle additional honey on top (optional)
